who was involved?
In the first season, this series follows a man who works in films as an extra. In the second season, it follows him when he has become a minor celebrity as the star of a comedy sitcom. I don't recall that any of the episodes made me laugh out loud, but the series is quirky, full of humor and well worth a watch.

The UK version of
The Office has too much cringe and other tension built into it to qualify as "comedy" for me, with the exception of episode 5 from season 2 ("Charity").

who was involved?
So far I've only watched a single episode, but this series strikes me as a bearable version of the loud series
La que se avecina. Both series document the lives of the inhabitants of an apartment building.
This one predates the other, and, from what I can tell so far, relies less on loud antics and gross characterization.
The second series was created as a continuation to the first after the production company was acquired, so you will recognize some of the cast.
I'm encouraged to watch some more.

A Spanish classic.
I've tried several times, but so far I'm not biting. Partly this has to do with the fact that much of the dialogue is lost on me. But the main cause is the theatrical style of the series (at least in Season 1). This leads to a lot of noise and commotion that I simply don't enjoy. Also, even though I expect the characters of a TV comedy to be somewhat caricatural, the caricature is way too thick for my taste. This may not be a problem for those who enjoy a similar style of French or British comedy.
To me, so far,
Aquí no hay quien viva seems superior. Not to sound snobbish, but it's the original version of the series (sporting some of the same cast) before the production company was acquired.
I've heard that Seasons 3 and 4 are less theatrical, and am planning to give those a go one of these days.
